Mini Oreo Cheesecakes

I found this lovely recipe on tiktok by thecaketoonist for mini oreo cheesecakes. So easy to make and so delicious. The downfall - you could easily find yourself eating a whole packet of oreos on your own when you make these!

I didn’t follow the recipe exactly, I have to be honest, but near enough.

The first time I tried, I used a store home brand soft cheese. The mix came out too soft, so the second time I used Philadelphia. That worked great.

My first try was with gluten free oreos and my second time I used normal oreos. I think they are quite interchangeable, though there are less biscuits in the gluten free packs, and they are a bit pricier.

In the tiktok, the cheesecakes are given a lovely coating of crushed oreo on the sides. I found that a bit too hard to do. I am quite heavy handed and when I tried to hold the biscuits to roll the cheescakes in the crushed oreo, I just accidentally squished them and the mix came squeezing out of the sides. That needs a slightly more delicate touch than I have. They look lovely in the tiktok with the oreo side-coating, so do have a go.

The cheesecake filling sets in about an hour. If you like the biscuit to be crunchy, you can eat them then. I found that leaving them for the next day was better for me. The biscuits went really soft. (not soggy) by the next day, and they were more dessert-like than biscuit-like, which is what I was after.

These are the ingredients I used:

  • 1 packet oreos, separated

  • 75g bar of white chocolate, melted (about half a large bar)

  • 165g Philadelphia soft cheese (1 small tub)

    Optional:

  • 1/2 tsp vanilla essence

  • 3 strawberries, sliced

  • 1/2 tsp cocoa powder

And this is how easy it is:

  1. Scrape the oreo filling into a bowl and soften it by mixing/mashing with a fork.

  2. Mix in the soft cheese a little at a time.

  3. Mix in the melted chocolate, a little at a time.

  4. Pipe the mixture onto half of the biscuits, then put the other biscuit halves on top.

  5. Decorate. I used a piped blob of leftover mixture, a slice of strawberry and a sprinkle of cocoa powder.
